Healthy Bananas

We always wind up with those over ripe- need to use them now- bananas on our shelf. Of course we normally love to make some yummy chocolate chip banana bread with our over ripe bananas, but a lot of the time we don’t feel like waiting an hour and half for something good to eat so we whip these babies up instead.

These banana and oatmeal pancakes are nice and healthy which is always a plus for delicious food especially in the morning. Start the day off right with these. Bananas are a great thing to eat in the morning.

  • They metabolize amino acids.
  • Metabolize carbs and fats, turning them into energy for the day.
  • Remove unwanted chemicals from places like the liver and kidneys.
  • Help to maintain a healthy nervous system.

And let’s be real, bananas are pretty cheap and are so good at sweetening things, you don’t need to add any sugar to these. If you don’t believe how good bananas are at sweetening things- check out our 3 ingredient fudge brownies ūüėČ You won’t be disappointed!

Banana and Oatmeal Pancakes

Let’s make pancakes ya’ll. Making these could not be easier. Mash up your over ripe bananas in a bowl, stir in the rolled oats, an egg, and your baking powder. I definitely recommend using rolled oats for these pancakes. The texture comes out much better than steel cut oats in my opinion. But hey you do you!

Oats are nice and healthy in the morning just like bananas. They are great at filling you up so you don’t feel the need to eat more food soon after breakfast. Awesome right? Especially if you are like me and are too busy to be hungry all the time.

Once you’ve mixed up your simple banana and oatmeal pancake batter, use a 1/4 cup to scoop onto a frying pan (we like to fry in a little melted butter but olive oil works too) over low heat. Because these pancakes don’t have flour, the structure is a bit loose so you’ll want to cook them smaller and over lower heat for 2-3 minutes before flipping. Cooking them with a lid on helps them to cook through a bit more before flipping them so they don’t fall apart.

And that’s it! So simple right? Top with some butter and warm maple syrup, grab some coffee and have an awesome day ya cool kid.
